In my family, love for red velvet cake runs deep—so deep, in fact, that I decided it was high time to shake things up a bit!

A few years back we attended a Valentine’s party for my kids. I needed to bring a dish, so I whipped out my red velvet cookie recipe and made it into a cake.

It was the perfect treat – a giant cookie made into a cake!

I cut it up into small bites so we could share it with friends. We served up these red velvet cake cookies, and everyone loved them.

What makes it even better is that it’s SO EASY to make! Decorating it is fun too, especially if it’s for a themed party.

  • Unsalted Butter: Makes the cookies rich and tender. Have it at room temperature so it mixes well.
  • Eggs: They bind everything together and add moisture.
  • Vanilla Extract: Adds a hint of warm, sweet flavor.
  • White Chocolate Chips: For creamy, melty pockets of sweetness in every bite.

How to Make Red Velvet Cookie Cake

Making this cookie cake with a red velvet cake mix is easy.

You’ll combine cake mix with the other ingredients in a large bowl using an electric mixer, bake it, let it cool on a wire rack, and then frost it.

Make the Cookie Cake

  1. Preheat Oven: Set your oven to 350°F. Line a 9-inch cake pan with foil or parchment paper and spray it with non-stick spray.
  2. Mix Ingredients: In a large mixing bowl, combine softened butter, red velvet cake mix, eggs, and vanilla extract. Fold in the white chocolate chips.
  3. Press into Pan: Press the cookie dough mixture evenly into the prepared cake pan.
  4. Bake: The bake time is 23-26 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.

Make the Frosting

  1. Prepare Frosting: In a medium bowl, mix softened cream cheese and butter until light and fluffy. Gradually add powdered sugar, mixing until smooth. Add milk as needed for desired consistency. Stir in vanilla extract.
  2. Frost and Decorate: Once the cookie cake has cooled, pipe or spread the cream cheese frosting on top. Add sprinkles for a festive touch.
