S’mores Cookies

Who doesn’t love s’mores? The combination of chocolate, gooey marshmallow and crisp graham crackers is irresistible!

This recipe always goes viral around National S’mores Day, which is August 10th.

Don’t worry though—when there’s no campfires around, you can get all the flavors of the original treat in cookie form any time of year.

These chewy s’mores cookies are so good, I bet you can’t eat just one!

Loaded with rich chocolate flavor and oodles of marshmallows and cookie chunks, these cookies are also easy to make.

I also love that this recipe doesn’t make dozens and dozens of cookies.

In fact, it makes 2 dozen good-sized cookies.

You can easily double or triple the recipe if you need more cookies, and you can also pop the baked cookies into the freezer to enjoy another time.

S’mores are so good, and I love all things s’more, from S’mores Donuts to S’mores Rice Krispie Treats and S’mores Brownies, the combination of flavors is so good!

What are S’mores?

S’mores are warm, messy, and downright delicious.

This campfire favorite is called “s’mores” because once you’ve had one, you’ll always want “some more”!

They’re made by toasting a marshmallow over an open fire and then smooshing it between 2 graham crackers along with a few squares of chocolate.

They are a sweet, smoky, and delicious treat that everyone I’ve ever met loves.

All the s’mores flavors are in this cookie recipe, and you don’t even need a campfire!

Why You’ll Love These S’mores Cookies

My kids say these are the best cookies. We all love this recipe so much, and I know you will too!

  • Warm and Gooey: These gooey smores cookies are soft, chewy, and just melt in your mouth. The gooey marshmallows tucked inside get all toasty, making every bite taste like a melty smore’s!
  • Rich, Chocolatey Flavor: The chocolate melts into pools of deliciousness. Add in the graham crackers and marshmallow, and you’ve got the ultimate s’mores chocolate chip cookies.
  • Fun & Customizable: Top them with extra mini marshmallows and graham cracker pieces for the prettiest cookies. You can even sneak in some pieces of Hershey or try a drizzle of melted chocolate on top of each cookie.
  • Love Chewy Cookies?: If you love a chewy cookie, this will be your favorite cookie! They’re soft with a hint of crunch, giving you the best of both worlds.
  • Classic S’mores Flavor: These classic s’mores flavors are packed into a cookie that’s way less messy than the original treat. It’s all the fun without the sticky fingers!

S’mores Cookies Ingredients

  • Salted Butter: It makes the dough smooth and adds a hint of saltiness that balances out the sweetness perfectly.
  • Sugar: Granulated sugar adds sweetness and helps the cookies bake up with a soft, chewy texture.
  • Eggs: Eggs help the cookies stay soft and chewy after they’re baked.
  • Cocoa Powder: This gives the cookies a deep chocolate flavor.
  • Flour: You can just use all-purpose flour in this recipe.
  • Salt and Baking Powder: The salt brings out the flavor of the chocolate and marshmallows, while the baking powder makes sure the cookies rise just enough to be perfectly fluffy.
  • Semi-Sweet Chocolate Chips: These little bits melt into gooey pools of chocolate in the cookies.
  • Kraft Mallow Bits: These tiny gooey marshmallows add a sweet, sticky chew that’s just like a roasted marshmallow. Adding more to the top of the cookie while they’re warm is the best part!
  • Graham Crackers: Crushed graham cracker crumbs and pieces of graham cracker bring that classic campfire flavor. They add a little crunch to every bite.

How To Make S’mores Cookies

  1. Get Your Oven Ready: Preheat your oven to 350°F. Grab a prepared baking sheet and line it with parchment paper so the cookies don’t stick.
  2. Mix the Butter and Sugar: In a large bowl, use a hand mixer or stand mixer with the paddle attachment to blend the salted butter and sugar until it’s light and fluffy.
  3. Add the Eggs and Cocoa: Mix in the eggs one at a time, then stir in the cocoa powder.
  4. Combine the Dry Ingredients: In a separate bowl, mix the all purpose flour, salt, and baking powder. Slowly add these dry ingredients to the wet ingredients, blending on medium speed until just combined. Don’t overmix!
  5. Fold in the Good Stuff: Gently fold in the semi-sweet chocolate chips, Kraft mallow bits, and graham cracker crumbs.
  6. Shape the Dough: Roll the dough into cookie dough balls and flatten them slightly to the size you want. Place them on the cookie sheet, leaving a little space between each.
  7. Bake to Perfection: Pop the cookies in the oven and bake for about 15 minutes. They’ll turn a lovely golden brown around the edges of the cookie while staying soft and chewy in the middle.
  8. Top and Cool: When the cookies are done, remove them and place them on a wire rack. While they’re still warm, add some of the suggested toppings for extra yumminess.

Smores Cookies Topping Ideas

  • Crushed Graham Crackers: Sprinkle crushed graham cracker squares or larger graham cracker pieces on the cookies.
  • Extra Mini Marshmallows: Scatter a few more mini marshmallows on top of each cookie right after they come out of the oven. They’ll melt slightly and are so good!
  • Hershey’s Chocolate Pieces: Press small squares of a Hershey’s bar or other chocolate bars into the cookies while they’re warm. They’ll melt just a bit and look adorable.
  • Caramel Sauce: Drizzle a little caramel sauce on top for even more gooey s’mores cookies.
  • Golden Graham Cereal: Sprinkle small pieces of Golden Graham cereal on top for a fun s’mores twist.

You could go all-out and even make your OWN homemade marshmallows!

Recipe Tips

  • Don’t overmix cookie dough. Always mix just enough to blend all the ingredients.
  • Line your baking sheet with parchment paper NOT waxed paper. There’s a difference!
  • Use a spatula, not your mixer, to fold in the graham cracker and Mallow Bits.
  • Use regular cocoa powder or for a richer chocolate flavor, use Dutch process cocoa powder.
  • Roughly chop the graham crackers with a knife. You want different-sized bits and chunks, not crumbs.
  • Garnish the cookies while they’re still hot – if you wait until the cookies are cool, the Mallow Bits and graham crackers won’t stick.
