Made with only 7 ingredients from your pantry, these pecan pie brownies come together with a gooey chocolate center.

This brownie variation is so delicious that you’ll be hard-pressed not to eat the entire batch yourself.

To make things simple, I use a store-bought box of brownies for this recipe, but if you prefer to make everything from scratch, you can make homemade brownies instead.

How to Make Pecan Pie Brownies

  • Preheat the Oven: Set your oven to the oven temperature on the back of the box brownie mix. Get your baking pan ready by greasing it or lining it with parchment paper.
  • Make the Brownie Layer : In a large bowl, prepare the brownie batter following the instructions on the box of brownie mix. Pour the batter into your prepared pan and bake for half of the time listed on the box. If it says 30 minutes, bake it for 15 minutes. This gives you a par-baked brownie layer.
  • Make the Pecan Pie Topping: In a small saucepan over medium heat, combine the sugar, light corn syrup, melted butter, and vanilla extract. Stir until the sugar mixture is smooth and melted. Crack in the eggs one at a time, whisking well after each one. Keep cooking and stirring for 10-15 minutes until the pecan mixture is thick and slightly browned. Stir in the chopped pecans and let it cook for another 2-3 minutes. This is your gooey pecan pie topping.
  • Layer the Topping: Take the brownies out of the oven and let them cool slightly. Pour the warm pecan pie layer over the top of the par-baked brownies. Spread it out evenly with a heatproof spatula or spoon.
  • Finish Baking: Put the pan of brownies back in the preheated oven. Bake for another 25-30 minutes until the pecan topping is set and golden.
  • Cool and Serve: Let the brownies cool completely on a wire rack before cutting them into squares. These gooey pecan pie brownies are best served with a scoop of vanilla ice cream or on their own as one of the best Thanksgiving desserts.

Tips For Success

  • Brownie Cooking Time: To get that gooey chocolate center, make sure to only cook the boxed brownies for half the time listed. They’ll finish cooking after you top them with the filling, but you really want the base to come out a bit gooey.
  • Which Brownie Box To Buy: Make sure to grab a family-size box of brownies so that it fills the 9×13 size pan. If you can’t find a family-size one, you will need to grab two regular-size boxes.
  • Serving Them: Let the pecan brownies cool completely before you try to cut them into squares. Otherwise, they tear, and you end up with a gooey (though delicious), mess.
  • Sugar: Though the recipe calls for traditional white sugar, know that light brown sugar will work as well. It will change the flavor of the pecan filling slightly so that it has a bit more of a caramel-like taste.

Storing Leftovers

Brownies can be stored in an airtight container on the counter for up to 4 days. You can store them in the fridge as well if you need them to last longer, but know that they will firm up slightly.

In the fridge, they stay fresh for up to 7 days and taste best if you’ve let them come back to room temperature.

Freeze the pecan brownies in an airtight container for up to 3 months. Just make sure to let them cool completely before storing them and let them thaw in the fridge overnight when you need them.

What can I use in place of corn syrup?

Corn syrup is not only what helps the pecan filling become deliciously sweet but also gives it that sticky texture you know and love. In a pinch, maple syrup or honey will work but the flavor will be slightly different.

How do you make a fudgy brownie and not a hard one?

The fudgy base of these brownies is made in part by having enough fats in the brownie and by not cooking the base fully. You want the brownie base to only be half-cooked when the pecan filling is poured on. From there, you’ll bake them together but still leave the brownie base every so slightly undercooked so that it has a delicious, fudgy texture.

Can you use homemade brownies for this recipe?

Of course. Homemade chocolate brownies can work as the base. However, make sure not to cook the brownies fully before topping them with the filling. This way all the flavors have enough time to blend together.

Pecan Pie Brownies

Ingredients

For the brownies:

  • 1 box brownie mix (and the ingredients on the back of the box) for a 9x13 inch pan

For the pecan pie topping:

  • 1 cup sugar
  • 1.5 cups light corn syrup
  • 4 eggs
  • 1/4 cup unsalted butter
  • 1.5 tsps vanilla extract
  • 2 cups chopped pecans

Instructions

  • Preheat your oven according to the back of the brownie mix box.
  • Mix the brownies according to the back of the box. Cook for HALF OF THE TIME that the box says to cook it. So, if it says to cook it for 30 minutes, cook it for 15 for example.
  • Combine the sugar, corn syrup, vanilla, and butter in a saucepot and cook over medium heat, stirring, until everything is melted and combined.
  • Whisk in the eggs, one at a time - stirring well after each addition, until all 4 eggs are added.
  • Cook on medium heat for 10-15 minutes, stirring occasionally, until the mixture is lightly browned and thick.
  • Stir in the chopped pecans and cook for an additional 2-3 minutes.
  • Remove the brownies from the oven and let cool slightly. Pour the warm pecan pie topping on top of the brownies and spread with a heat proof spatula to evenly coat. Put the brownies back in the oven (same temperature) and cook for an additional 25-30 minutes.

Notes

You can use homemade brownies if you prefer, just be sure to only cook them for half the time before adding the pecan pie topping.
