The BEST Biscuit Casserole Recipe with Beef

This Biscuit Casserole has delicious layers of ground beef, cheese, tomatoes, and biscuits. It is so easy to make and is a favorite family meal!

Biscuit Casserole
This Biscuit Casserole recipe is a dish that I grew up eating. We had it a lot in the summer with fresh garden tomatoes were in abundance.
As a child, I didn’t really like tomatoes (even though I love them now!), but I could eat piles of this casserole. Now that I am an adult, I make it for my own children and they love it too. Even the pickiest of eaters will eat this delicious recipe!
I mentioned that this recipe was super easy, and it is! The prep doesn’t take much time at all and the rest of the work, the oven does.
I prefer to use homemade biscuit dough as the base of this biscuit casserole recipe, but just because I do doesn’t mean that you have to.
It can be simplified by using frozen biscuits.
When I use homemade biscuit dough, I don’t cut them into individual biscuits. Instead, I spread the dough into the bottom of a casserole dish to line it.
If you are using frozen biscuits, just place enough in the bottom of you dish to cover the bottom.

This is the recipe I use when I make Biscuit Casserole. I’ve done frozen biscuits many times before (don’t thaw them first) and it’s still really good – but if I have the time, I prefer to make homemade biscuit dough. It’s cheaper too!
You could also use a biscuit mix such as Bisquick to make this dish.
In a pinch, I have used drained canned tomatoes when making this. It turned out really good! The fresh tomatoes are really best but it’s still very good using canned tomatoes.

- Biscuit Dough: This is the base of your casserole. You can use either homemade or store-bought frozen biscuits. It provides a soft, fluffy layer that soaks up the flavors of the ingredients.
- Ground Beef: Lean ground beef is best, but you’ll drain off the excess grease.
- Onion and Garlic: Diced onion and minced garlic are sautéed with the beef. They add depth and aromatic flavors to the entire casserole.
- Tomatoes, Bell Pepper, and Jalapeños: Sliced tomatoes, chopped bell pepper, and de-seeded jalapeños bring freshness, a slight kick, and some nice color.
- Shredded Cheese: A mix of sharp cheddar and pepperjack cheese gives the casserole a gooey, melty texture and a spicy, tangy flavor.
- Mayonnaise and Sour Cream: Mixed with the cheeses, mayonnaise and sour cream create a creamy, rich layer that binds the casserole together. It also helps keep the casserole moist.
- Italian Seasoning, Garlic Salt, Onion Powder, Salt, and Pepper: These seasonings are mixed with the cheese and cream mixture, turning your casserole into a delicious meal. If you don’t have garlic salt, use garlic powder and add a little more salt.

How to Make Biscuit Casserole
- Preheat the Oven: Begin by setting your oven to 400 degrees F.
- Prepare the Baking Dish: Take a baking dish and line it with frozen biscuits or your own biscuit dough. Place the dish in the oven and bake for 10 minutes. This step partially cooks the biscuits, making them ready for the casserole layers.
- Cook the Beef: While the biscuits are in the oven, grab a large skillet and heat it over medium-high heat. Add lean ground beef, chopped onions, and minced garlic, cooking until the beef is browned. Season with salt and black pepper to taste. Once cooked, drain off the excess grease and set the meat mixture aside.
- Mix the Cheese Layer: In a large bowl, combine 3 cups of cheese with sour cream and mayonnaise. Add in chopped bell peppers, jalapenos, and your choice of seasonings. This mixture will create a creamy, flavorful layer for your casserole.
- Assemble the Casserole: After the biscuits have baked for 10 minutes, take them out of the oven. Layer the cooked beef and onion mixture over the biscuits. Then, cover the beef with tomato slices, seasoning them with a bit more salt and pepper. Next, spread the cheese mixture evenly over the tomatoes. For a touch of color and flavor, sprinkle the top with paprika.
- Bake the Casserole: Place the casserole back in the oven and bake for 20 minutes. The cheese should be melted and bubbly, and the entire casserole golden brown.
- Cool and Serve: Once baked, let the casserole cool for about 10 minutes. This makes it easier to slice and serve. Garnish with some fresh green onions if you’d like.
Flavor Variations for Biscuit Casserole
- Mexican Twist: Add taco seasoning to the ground beef and replace the Italian seasoning with cumin and chili powder. Top with avocado slices and cilantro before serving.
- Italian Flavor: Mix in some marinara sauce with the beef and use mozzarella and parmesan cheese instead of cheddar and pepper jack. Add some oregano and basil to the cheese mixture. It’s like a pizza in a biscuit casserole form!
- BBQ Style: Stir in your favorite BBQ sauce with the cooked ground beef. Use smoked cheddar cheese for a deep, smoky flavor. This gives a sweet and tangy BBQ taste to the dish.
How to Store Leftovers
- Let the biscuit casserole cool down to room temperature after baking.
- Cut the entire casserole into smaller pieces. This makes it easier to store and reheat later.
- Choose an airtight container large enough to fit the pieces. If you don’t have a single container large enough, use multiple containers.
- Place the casserole pieces into the airtight container. If stacking pieces, place a sheet of parchment paper between layers to prevent sticking.
- Store the container in the refrigerator if you plan to eat the leftovers within 3-4 days.
- For longer storage, place the airtight container in the freezer. The biscuit casserole can be frozen for up to 3 months.
- To reheat, thaw in the refrigerator overnight if frozen. Then, warm in the oven at 350 degrees F for 25-30 minutes or until heated through. If in smaller pieces, check after 10-15 minutes.
Italian Beefy Biscuit Casserole
Ingredients
- prepared biscuit dough or frozen biscuits to line the bottom
- 1 Pound ground beef
- 1 Medium onion diced
- 2-3 Cloves minced garlic
- 4-6 tomatoes sliced
- 1 bell pepper de seeded & chopped
- 2 jalapenos de-seeded & chopped
- 3 Cups shredded cheese I like a mix of sharp cheddar & pepperjack
- 1 Cup mayonnaise
- 1 Cup sour cream
- 1 Tbsp Italian seasoning
- 1 Tsp garlic salt
- 1 Tsp onion powder
- salt & pepper to taste
- paprika to taste (optional)
Instructions
- Preheat your oven to 400 degrees. Line your casserole dish with frozen biscuits (keep them frozen) or a batch of biscuit dough. My Mama’s Biscuit recipe is on my website and that’s what I use. Bake at 400 degrees for 10 minutes.
- Meanwhile, brown up the ground beef along with the chopped onion and minced garlic. Season with salt and pepper. Drain off the grease and set aside.
- In a large bowl, combine the 3 cups of cheese with the mayonnaise and sour cream. Stir in the chopped bell pepper, jalapeno, and the seasonings.
- After the biscuit dough/biscuits have par-baked for 10 minutes, remove them from the oven and spread the drained beef and onion mixture over top. Cover the beef completely with slices of tomato. Season the tomatoes with salt and pepper.
- Spread the cheese mixture evenly over top of the tomatoes. Sprinkle lightly with paprika.
- Bake at 400 degrees for 20 minutes. Let cool for 10 minutes before slicing into it.
